Ingredients

  • 2 tsp. canola oil
  • 1 c. chopped onions
  • 1 c. chopped celery
  • 1 c. chopped green peppers
  • 3 pkg. Hi-Energy Tomato Soup Supplement
  • 24 oz. water
  • 1 1/2 c. mushrooms, sliced
  • 1 1/2 c. chopped tomatoes, peeled
  • 1 pkg. Sweet 'N Low
  • 3 (4 oz.) boneless, skinless chicken breasts, boiled until tender
  • 1 tsp. Italian seasoning
  • 2 tsp. parsley
  • Mrs. Dash extra spicy seasoning to taste
  • 1 tsp. minced garlic

Directions

    In a nonstick skillet, add the canola oil and brown onions, celery and green peppers.

    Dissolve tomato soup in water; set aside.

    Transfer entire skillet mixture to saucepan; add remaining ingredients and mix well.

    Simmer approximately 1 hour until tender.
