- 4 chicken breast halves
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 1 can Ro-Tel tomatoes, diced
- 12 oz. spaghetti
- 8 oz. Velveeta cheese
- salt and pepper to taste
Directions

1Cook chicken breasts until tender.

2Remove from bones and add back to stock along with onion, pepper, celery and tomatoes.

3Add water, if necessary, and cook until onion, pepper and celery are tender.

4Add spaghetti and cook until spaghetti is done.

5There should not be any liquid left.

6When spaghetti is done, add Velveeta cheese and stir until cheese melts.

7Don't let spaghetti cook out too dry.

8If this happens, add a small amount of canned chicken broth.
