- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1 c. celery, chopped
- 1 can Ro-Tel tomatoes
- salt and pepper to taste
- uncooked spaghetti
- 2 cans creamed soup (chicken, celery or mushroom)
- 1 lb. Velveeta, cubed
- 4 large chicken breasts, cooked and chopped
- 1 can mushrooms, chopped
Directions

1Saut onion, bell pepper and celery in butter.

2Add soup, tomatoes, mushrooms, cheese and chicken in a large pot.

3Simmer for 25 to 30 minutes.

4Meanwhile, cook spaghetti in the leftover chicken broth.

5Combine spaghetti and sauce.

6Pour into a 9 x 13-inch pan.

7Bake for 20 minutes at 300°.
