- 1 whole chicken, boiled
- 1 c. broth
- 1 (7 oz.) pkg. vermicelli
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 (8 oz.) pkg. Velveeta cheese
- 1 can Ro-Tel tomatoes
- 1 stick margarine
- 1 can whole kernel corn, drained
- 1 can English peas (LeSueur), drained
Directions

1Saute onions and pepper in margarine (may also add chopped mushrooms).

2Cook vermicelli in leftover broth and drain.

3Debone chicken in bite size pieces.

4Add cheese and Ro-Tel to sauteed mix to melt.

5Mix all together well.

6Bake, covered, in a 2-quart casserole dish at 375° for 45 minutes.
