Chicken Spaghetti Delight

  • 8 oz. thin spaghetti
  • 2 qt. chicken broth
  • 1 medium green pepper, chopped
  • 1 medium onion, chopped
  • 1 Tbsp. cooking oil
  • 1/2 c. margarine
  • 2/3 c. flour
  • 1 Tbsp. salt
  • 1/2 tsp. pepper
  • 1 qt. milk
  • 1 lb. shredded Cheddar cheese
  • 1 (4 oz.) can mushrooms
  • 4 c. cooked chicken

Directions

    Cook spaghetti in boiling chicken broth 4 minutes.

    Drain and rinse.

    Saute pepper and onion in hot oil until soft.

    Melt butter in saucepan; add slowly flour, salt and pepper.

    Stir until smooth.

    Slowly add milk, stirring constantly, and cook over medium heat until it boils.

    Remove from heat; add cheese and undrained mushrooms.

    Combine spaghetti, sauteed vegetables, cheese sauce and chicken.

    Put in greased casserole.

    Cover with foil.

    Bake 1 hour at 400°.

    Sprinkle with Parmesan cheese last 10 minutes if desired.
