Ingredients
- 1 small onion, chopped
- 1/2 medium green pepper, chopped
- 2 stalks celery, diced
- 2 Tbsp. butter or margarine
- 1 can mushroom stems and pieces, undrained
- 1 can stewed tomatoes (crushed)
- 1 bay leaf
- 1/2 tsp. sugar
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 tsp. Worcestershire sauce
- 1 1/2 c. diced, cooked chicken
- 1 Tbsp. each: cornstarch and cold water
- 1/4 c. chopped parsley
- hot cooked brown or white rice
Directions

1In 2-quart saucepan, saute onion, green pepper and celery in butter until onion is tender but not browned.

2Add mushrooms, tomatoes, bay leaf, sugar, salt, pepper and Worcestershire sauce. Bring to boil; simmer, uncovered, for 10 minutes.

3Add chicken and heat.

4Blend cornstarch and water and stir into mixture.

5Cook, stirring, until thickened.

6Add parsley.

7Serve on hot cooked rice.
