- 4 Tbsp. vegetable oil
- 16 chicken thighs, skinned
- 1 c. water
- 1/2 c. soy sauce
- 1/2 c. light brown sugar
- 1/2 c. apple juice
- 4 Tbsp. ketchup
- 2 Tbsp. cider vinegar
- 2 cloves garlic, crushed
- 1 tsp. crushed red pepper
- 1/2 tsp. ground ginger
- 2 Tbsp. cornstarch, combined with 2 Tbsp. water
Directions

1In skillet, heat oil and brown chicken on all sides, turning, about 5 minutes on each side.

2In large bowl combine all other ingredients but cornstarch mixture.

3Add to chicken and bring to boil.

4Cover and reduce heat.

5Simmer 20 minutes.

6Mix cornstarch and water now and add to chicken, stirring until sauce is thick and chicken is glazed.

7Top with scallions.
