Chicken "Spareribs"

Ingredients

  • 4 Tbsp. vegetable oil
  • 16 chicken thighs, skinned
  • 1 c. water
  • 1/2 c. soy sauce
  • 1/2 c. light brown sugar
  • 1/2 c. apple juice
  • 4 Tbsp. ketchup
  • 2 Tbsp. cider vinegar
  • 2 cloves garlic, crushed
  • 1 tsp. crushed red pepper
  • 1/2 tsp. ground ginger
  • 2 Tbsp. cornstarch, combined with 2 Tbsp. water

Directions

    In skillet, heat oil and brown chicken on all sides, turning, about 5 minutes on each side.

    In large bowl combine all other ingredients but cornstarch mixture.

    Add to chicken and bring to boil.

    Cover and reduce heat.

    Simmer 20 minutes.

    Mix cornstarch and water now and add to chicken, stirring until sauce is thick and chicken is glazed.

    Top with scallions.
