Ingredients

  • 1 large, deboned chicken, cooked in salted water
  • 1 large onion, chopped fine
  • 1 c. celery and leaves, cut fine
  • 1/2 c. butter
  • 1/2 c. chicken broth
  • 1 tsp. garlic salt
  • 1 large can evaporated milk
  • 2 cans cream of chicken soup
  • 3 jalapeno peppers, chopped
  • 1 pkg. tortillas, torn in pieces
  • 1 lb. grated Cheddar cheese

Directions

    Bone chicken and cut in small pieces.

    Simmer onion, peppers and celery in butter.

    Add broth, garlic salt, milk and chicken soup.

    Put chicken pieces into mixture and cook for 5 minutes. Line large pan with tortillas.

    Add a layer of chicken mixture. Top with cheese.

    Make 3 layers of each.

    Top layer should be cheese.

    Bake 30 minutes at 350°.

    Cool slightly and cut in squares.
