  • 2 large onions, quartered
  • 6 carrots, cut up in 1 inch pieces
  • 4 cloves garlic, whole
  • 1/4 c. red wine vinegar
  • 1/2 c. dry white wine
  • 1/2 tsp. oregano
  • 6 potatoes, cubed

Directions

    Place all ingredients in covered casserole or roaster pan. Bake at 450° for 20 minutes, then at 350° for approximately 1 1/2 hours.
