  • 4 boneless chicken breasts, cut into bite size chunks
  • 6 large potatoes, cut into bite size chunks
  • 1 lb baby carrots
  • 1 small onion, diced (optional)
  • 2 (8 ounce) cans cream of mushroom soup
  • 6 ounces sliced mushrooms (optional)

Directions

    Spray the crock pot with a little cooking spray.

    Layer carrots, potatoes, onion, mushrooms in crock pot.

    Season each layer with a little salt and pepper.

    Arrange the chicken on top of the veggies.

    Cover the chicken with the soup and spread evenly.

    Cook on high for about 3 hours.

    Stir and cook on low for another hour until chicken and potatoes are cooked through.
