Chicken-Stuffed Tomatoes

  • 4 large ripe tomatoes, peeled
  • 3 c. cubed, cooked chicken
  • 1/4 c. finely chopped celery
  • 4 green onions, finely chopped
  • 2 hard-boiled eggs, chopped
  • 2 Tbsp. sweet pickle relish
  • 1/2 c. mayonnaise
  • 2 Tbsp. sour cream
  • 1 tsp. seasoned salt
  • salt and pepper
  • salad greens (romaine or iceberg)

Directions

    Remove pulp from tomatoes to form 1/2 inch tomato shells. Turn shells upside down on paper towels to drain.

    Combine chicken, celery, onions, eggs and relish in a medium bowl.

    Mix mayonnaise, sour cream and seasoned salt; add to chicken mixture. Toss lightly until mixed.

    Add salt and pepper to taste.

    Fill tomatoes with chicken salad and serve garnished with salad greens.
