  • 1 large bunch broccoli
  • about 4 chicken breast halves (2 c. cooked)
  • 1 carrot
  • 1/4 tsp. celery seed
  • several onion slices
  • 1 small bay leaf
  • 2 cans cream of chicken soup
  • 1 c. light mayonnaise
  • 2 c. grated Cheddar cheese
  • 1 c. uncooked white rice
  • 1 c. sour cream or 1 c. plain yogurt
  • 1 Tbsp. lemon juice
  • 1 tsp. curry powder

Directions

    Cook chicken in water to cover with carrot, onion, celery seed and bay leaf.

    Reserve broth and cut chicken into bite-sized pieces.

    Sprinkle with lemon juice and curry powder.

    Bring 2 cups chicken broth to boil.

    Add rice and cook 20 minutes.
