- 2 whole Chicken Legs, Cut Into Thigh And Drumstick
- 2 cloves Garlic, Minced
- 1 whole Preserved Lemon, Rinsed Well, Pulp And Pith Removed, Cut Into Strips Or Diced
- 2 Tablespoons Fresh Ginger, Grated
- Juice Of 1 Lemon
- 1 Tablespoon Cumin
- 1 Tablespoon Coriander
- 1 teaspoon Cumin Seeds (optional)
- 2 whole Medium Carrots, Cut Into 2-inch Long Pieces
- 2 whole Medium Zucchini, Cut Into 2-inch Long Pieces
- 1 whole Large Red Or Green Pepper, Cut Into 2-inch Long Pieces
- 1/2 cups Olive Oil
- Freshly Ground Black Pepper, To Taste

2Combine all of the ingredients in a bowl and let marinate for 1 hour.

4Heat a large skillet until very hot.

5Brown the chicken parts in a bit of olive oil until browned on both sides, about 5 minutes.

9Deglaze the pan with the marinade from the bowl and then lower the heat.

10Cook on low heat for 45 minutes, partly covered.

11Note: If you dont have preserved lemons on hand, you can make them the quick and easy way!

12Take 1 cup water, 2 tablespoons kosher salt and 2 lemons, washed and quartered.

13Bring the water to a boil with the salt, and add the lemons.

14Cook for 30 minutes or until theyre tender.
