Ingredients

  • 1/4 cup olive oil
  • 1 lg. onion
  • scallions, sliced
  • 1 tbsp. parsley
  • 1 clove garlic, mashed
  • 1/3 cup green olives
  • 1 lemon, cut in wedges
  • 1 tbsp. coriander
  • 1 tsp. salt
  • Ground black pepper, to taste
  • 1/8 tsp. saffron
  • 1 cut up chicken, skin off

Directions

    Place oil in a large pot on stove.

    Add all ingredients except olives.

    Stir to coat with flavors.

    Cover and simmer for about an hour, stirring occasionally.

    When done, stir in olives.

    Just heat for a few more minutes.
