- 1/4 cup olive oil
- 1 lg. onion
- scallions, sliced
- 1 tbsp. parsley
- 1 clove garlic, mashed
- 1/3 cup green olives
- 1 lemon, cut in wedges
- 1 tbsp. coriander
- 1 tsp. salt
- Ground black pepper, to taste
- 1/8 tsp. saffron
- 1 cut up chicken, skin off
Directions

1Place oil in a large pot on stove.

2Add all ingredients except olives.

3Stir to coat with flavors.

4Cover and simmer for about an hour, stirring occasionally.

5When done, stir in olives.

6Just heat for a few more minutes.

7Serve on a platter of rice with salad, pita bread, and mint tea for a delightful Moroccan dinner.
