  • 4 chicken breast halves, boned and flattened to even thickness (about 3/8-inch)
  • 1/2 c. flour
  • 1/3 c. Parmesan cheese
  • 1 to 2 Tbsp. parsley flakes
  • 1 egg
  • 3 Tbsp. half and half
  • 1/2 clove minced garlic

Directions

    Dredge each piece of chicken in plain flour, then dip in the egg, half and half and garlic that have been beaten together in a shallow bowl.

    Coat with the flour, Parmesan cheese and parsley flakes, that have been combined in a shallow pan.

    Salt each piece lightly before turning to coat second side.

    Saute in mixture of butter and vegetable oil until golden and done.

    Meat should be moist and juicy inside and crispy outside.
