  • 1 recipe Black Bean and Corn Salad
  • 2 c. shredded cooked chicken breast
  • 4 flour tortillas
  • 4 c. shredded lettuce, some dark green
  • 1/2 c. Monterey Jack cheese, shredded

Directions

    Combine chicken with bean salad.

    Bake flour tortillas in 375° oven until crisp (about 7 to 10 minutes).

    Place a baked tortilla on each of four plates.

    Top each with 1 cup lettuce.

    Divide chicken and bean mixture into four portions, mound on top of lettuce.

    Top each with 2 tablespoons shredded cheese.
