Chicken Vegetable Saute

- 4 chicken thighs
- 4 chicken legs
- 1/2 c. margarine
- 1 clove garlic, minced
- 4 medium-sized potatoes, pared and diced
- 2 green onions, sliced
- 1 (10 oz.) pkg. frozen green peas
- 12 whole mushrooms
- 1/4 c. chicken broth
- 2 Tbsp. parsley, minced
Directions

1Wash and dry the chicken.

2Heat margarine in heavy skillet that has a lid.

3Add garlic and chicken.

4Saute slowly over very low heat until browned and chicken is cooked almost all the way through, about 20 minutes.

5Add potatoes and green onions to the pan with chicken.

6Place chicken pieces on top of the potatoes. Cover and saute 5 minutes.

7Add peas, mushrooms and chicken broth.
