- 1 (3 lb.) broil/fryer, quartered
- 1/2 c. olive oil
- 1 c. artichoke hearts (optional)
- 3/4 c. cooking sherry (optional)
- 1 clove garlic, crushed
- 1 (1 lb. 13 oz.) can whole tomatoes
- 1/2 tsp. oregano
- salt and pepper to taste
Directions

1Brown chicken in oil.

2Drain and remove to platter (keep warm in oven).

3Saute onions in oil until transparent.

4Add tomatoes and simmer, stirring constantly for 5 minutes.

5Return chicken to sauce, add other ingredients except sherry.

6Simmer, covered, for 25 minutes (turn chicken occasionally).

7Stir in sherry and cook 5 minutes more.

8(Is good served with rice.)
