- breasts of chicken
- salt, pepper, thyme and flour
- butter
- brandy
- paprika
- heavy cream (small container)
Directions

1Bone and skin breasts of chicken.

2Dust with salt, pepper, thyme and flour.

3Melt 1/4 pound butter in frying pan, enough for 4 pieces.

4Cook until golden brown, 7 to 10 minutes.

5Remove from fire. Pour 1 scant jigger brandy over pieces.

6Light with match immediately and flame.
-
7Put back on fire.
-
8Add heavy cream and simmer on low for 10 minutes.

9Place pieces on hot platter.
-
10Add paprika to sauce and stir.

11Pour over meat.
-
12Serve with string beans, mushrooms and rice.
