Chicken With Capers

Ingredients
- 1 chicken, cut up
- 1 c. onion
- 1/2 c. chopped green pepper
- 1/2 c. salad style olives with pimentos
- 1 small can tomato sauce
- 7 capers with a little juice
- parsley flakes
- 1 bay leaf
- 1 Tbsp. vinegar
- 1/2 c. or more celery
- salt, pepper, garlic and paprika (shaken on)
Directions

1Saute in a little oil on bottom of large pot the onion, green pepper, salt, pepper, garlic, paprika and parsley flakes until soft.

2Add chicken; stir on high flame until it is all mixed up. Turn flame down to medium; simmer about 15 minutes.

3Add capers and olives; cook for 20 minutes, then add tomato sauce, vinegar and bay leaf.

4Cook for 20 minutes.

5Add celery; cook 20 minutes more, or until tender.

6Stir up chicken a little throughout cooking.

7Serve with rice.

8Makes own gravy.
