Chicken With Peanuts

- cooked rice
- 9 1/16 cups frozen broccoli
- olive oil
- 1 onion medium
- 1 teaspoon sugar
- 3 chicken breasts
- salt
- 9/16 cup honey roasted peanuts
- 1/2 lemon juice
Directions

1Cook rice according to package instructions.

2Boil the broccoli in a pot of salted water, but do not overcook.

3Heat the olive oil in a large frying pan, add the diced onion, and and sprinkle with sugar. This will make the onions caramelize faster. Cook on a low heat. When the onion starts getting brown, add the chicken breast in cubes, season with a bit of salt, and add the lemon juice. Stir occasionally.

4When the chicken is almost done, add the peanuts, stir well, and cook for another 3 to 4 minutes.

5Drain the broccoli. In a large bowl, mix the chicken with the peanuts, and broccoli.

6Serve with rice.
