Chicken With Peanuts

  • cooked rice
  • 9 1/16 cups frozen broccoli
  • olive oil
  • 1 onion medium
  • 1 teaspoon sugar
  • 3 chicken breasts
  • salt
  • 9/16 cup honey roasted peanuts
  • 1/2 lemon juice

Directions

    Cook rice according to package instructions.

    Boil the broccoli in a pot of salted water, but do not overcook.

    Heat the olive oil in a large frying pan, add the diced onion, and and sprinkle with sugar. This will make the onions caramelize faster. Cook on a low heat. When the onion starts getting brown, add the chicken breast in cubes, season with a bit of salt, and add the lemon juice. Stir occasionally.

    When the chicken is almost done, add the peanuts, stir well, and cook for another 3 to 4 minutes.

    Drain the broccoli. In a large bowl, mix the chicken with the peanuts, and broccoli.

    Serve with rice.
