- 1 frying chicken
- 1/2 c. oil
- 1 c. rice, uncooked
- 1/2 onion, chopped
- 1 clove garlic, minced
- 1/4 c. tomato puree
- 2 1/2 c. boiling water
- salt and pepper
Directions

1Cut chicken in pieces and fry in oil until a delicate brown. Remove from pan.

2Add the unwashed, uncooked rice to the oil in the pan and fry until golden, stirring frequently.

3Add onion, garlic, tomato puree and boiling water.

4Season with salt and pepper.

5Add the browned chicken and let simmer, covered, for 30 minutes.

6Do not remove.

7Cover.

8It must steam thoroughly. Serves 4 to 6.
