Chickpea Patties

Ingredients

  • 1 None red onion, finely chopped
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 None small red chili pepper, finely chopped
  • 1 None lime, peel grated
  • 2 tbsp coarsely chopped fresh cilantro
  • 1/4 cup flour, sifted
  • 1 None egg, lightly beaten
  • None None Salad, sweet chili sauce and lime wedges, to serve

Directions

    Heat a large skillet on medium heat. Spray with no stick cooking spray. Saute onion for 2 mins, until soft. Transfer to a bowl. Add half the chickpeas.

    Place the remaining chickpeas and ingredients in a food processor and process until smooth. Season to taste. Stir into onion and chickpea mixture.

    Wipe out pan with paper towels. Place on medium heat and spray with cooking spray. Cook 2 tbsp measures of mixture, flattening with a spatula, for 2-3 mins each side, until crisp and golden. Serve with salad, sweet chili sauce and lime wedges.
