- 2 (19 oz.) cans chickpeas
- 1 clove garlic
- 1/2 c. black olives
- 1/3 c. chopped red onion
- 1/3 c. chopped parsley
- 1/4 c. vinegar
- salt and pepper
- 1/2 c. olive oil
Directions

1Drain chickpeas and rinse.

2Mince garlic.

3Pit olives and slice.

4Combine first 5 ingredients in a bowl.

5In a small jar, shake together vinegar, 3/4 teaspoon salt and 1/2 teaspoon pepper until salt dissolves.

6Add oil and shake again to combine.

7Pour this dressing over chickpea mixture and toss.

8Serves 6.
