  • 14 ounces, weight Sweetened, Flaked Coconut
  • 3/4 cups Sugar
  • 1/3 cups Flour
  • 1/4 teaspoons Salt (optional)
  • 4 whole Egg Whites
  • 1/2 teaspoons Almond Extract

Directions

    Preheat oven to 325 degrees. Grease and flour a large baking sheet.

    Mix together coconut, sugar, flour and salt, breaking up any large pieces of coconut. Mix in 4 egg whites and almond extract.

    Drop spoonfuls of coconut mixture onto the baking sheet. I use a heaping teaspoonful of it. It's a bit sticky, so use the 1/2 teaspoon to get it onto the sheet in a somewhat pretty manner. Or use a cookie scoop.

    Bake for 20 minutes. Inhale, because your kitchen smells fantastic.

    Variation: dip in or drizzle on chocolate and/or colored candy coating.
