Chickpea Stew

- 1 large onion, chopped
- 1 large carrot, diced 1/2-inch
- 1 Tbsp. vegetable oil
- 2 large potatoes, peeled and diced
- 1 (14 oz.) can whole tomatoes
- 1 tsp. dried basil
- fresh ground black pepper
- 2 c. cooked chickpeas
Directions

1Place onion and carrot in medium pan with oil.

2Saute over low heat for 5 to 10 minutes.

3Add potatoes, tomatoes (with the juice), basil and pepper; stir to blend.

4Cover and simmer gently for about 30 minutes, or until potatoes are soft.

5Stir occasionally to make sure potatoes do not stick to pan.

6Add the chickpeas; warm through gently.
