- 1 lb. sharp Cheddar cheese
- 1 lb. mild Cheddar cheese
- 2 (7 oz.) cans whole green chiles, deveined, seeded, rinsed and drained
- 8 eggs, beaten
- 1 pt. sour cream
- 1/2 lb. Monterey Jack, grated
Directions

1Grate sharp and mild Cheddar cheeses (or cheat and buy them already grated).

2Keep separate.

3Grease a 2-quart casserole dish. Layer ingredients in this order: sharp Cheddar cheese on bottom, half the chilies, the mild Cheddar cheese and cheese and chili mixture.

4Bake for 45 to 50 minutes at 325°.

5Add Monterey Jack cheese during the last 10 or 12 minutes.

6Serves 8.
