Chile Casserole(Excellent)

  • 1 lb. sharp Cheddar cheese
  • 1 lb. mild Cheddar cheese
  • 2 (7 oz.) cans whole green chiles, deveined, seeded, rinsed and drained
  • 8 eggs, beaten
  • 1 pt. sour cream
  • 1/2 lb. Monterey Jack, grated

Directions

    Grate sharp and mild Cheddar cheeses (or cheat and buy them already grated).

    Keep separate.

    Grease a 2-quart casserole dish. Layer ingredients in this order: sharp Cheddar cheese on bottom, half the chilies, the mild Cheddar cheese and cheese and chili mixture.

    Bake for 45 to 50 minutes at 325°.

    Add Monterey Jack cheese during the last 10 or 12 minutes.

    Serves 8.
