- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 3 bell peppers, cut into strips
- 2 medium onions, sliced
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- 2 teaspoons hot chili peppers or 1 teaspoon red pepper flakes
- 4 boneless skinless chicken breasts, cut into bite-sized pieces
- 3 tablespoons lemon juice
Directions

1In a large non-stick skillet, heat oil, add garlic and cook 1 minute.

2Add peppers, onions and spices. Mix well and cook covered over medium heat for 10 minutes.

3Meanwhile, sprinkle the chicken with the lemon juice.

4At the end of the 10 minutes, add the chicken. Mix well and cook covered over medium heat for another 10 minutes, stirring occasionally.
