Chile Con Queso

- 1/2 c. finely chopped onion
- 1 Tbsp. butter or margarine
- 2 medium tomatoes, chopped or 1 medium can
- 1/4 tsp. salt
- 1 1/2 c. shredded cheese
- 1 (4 oz.) can green chile peppers (found in Mexican section of grocery store)
Directions

1In a medium skillet, cook onion in butter or margarine until tender, but not brown.

2Stir in tomatoes, chili peppers and salt. Simmer, uncovered, for 10 minutes.

3Add cheese a little at a time until cheese is completely melted.

4Serve immediately with tortilla chips or corn chips.

5This can be prepared ahead of time by leaving out the cheese and later microwave with cheese, stirring frequently.
