Chile Con Queso Mini-Bites

Ingredients
- 1/2 cup tomatoes chopped
- 1/4 cup scallions, spring or green onions minced
- 1 clove garlic minced
- 4 large eggs beaten
- 1/2 cup cheddar cheese shredded
- 1/2 cup monterey jack cheese shredded
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1 can green chili peppers rinsed, drained, sliced
Directions

1Coat a nonstick skillet with cooking spray; place over heat until hot.

2Add tomato, green onions and garlic.

3Saute until onions are tender.

4Combine tomato mixture, eggs, cheeses, chili powder, cumin, red pepper and chopped green chiles.

5Stir well, spoon 1 teaspoon mixture into minature muffin pans coated with cooking spray.

6Bake at 425F (220C) for 8 to 10 min.

7or until centers are set.

8remove from oven; let cool in pans 1 min.

9Loosen edges with knife and remove from pans.
