Chile Corn Chowder

- 1 lb. Italian sausage
- 1 onion, chopped
- 1 c. potatoes or more, diced
- 2 carrots, sliced
- 2 celery, sliced
- 2 cans creamed corn (15 oz.)
- 1 can diced green chiles
- 2 c. milk
Directions

1In a large, heavy pot, brown sausage (may use ham, chicken or kielbasa) and onion.

2Use oil, if necessary.

3Drain fat.

4Add potatoes, carrots and celery.

5Add enough water to cover.

6Cook until vegetables are tender.

7Add corn, chiles and milk.

8Heat and serve.

9Thicken with instant mashed potato flakes, if necessary. Hearty winter meal!
