Chile Corn Chowder

  • 1 lb. Italian sausage
  • 1 onion, chopped
  • 1 c. potatoes or more, diced
  • 2 carrots, sliced
  • 2 celery, sliced
  • 2 cans creamed corn (15 oz.)
  • 1 can diced green chiles
  • 2 c. milk

Directions

    In a large, heavy pot, brown sausage (may use ham, chicken or kielbasa) and onion.

    Use oil, if necessary.

    Drain fat.

    Add potatoes, carrots and celery.

    Add enough water to cover.

    Cook until vegetables are tender.

    Add corn, chiles and milk.

    Heat and serve.

    Thicken with instant mashed potato flakes, if necessary. Hearty winter meal!
