  • 10 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 tablespoons unsalted butter
  • 2 cups small curd cottage cheese
  • 1 lb monterey jack cheese, shredded
  • 2 (4 ounce) cans green chilies, chopped
  • 1/4 cup parmesan cheese, grated

    Heat oven to 350 degrees.

    Spray a 9 inch square csserole dish with oil.

    In the bown of a stand mixer, slightly beat eggs.

    In a separate bowl, sift flour, baking powder, and salt.

    Add to eggs and beat to combine.

    With mixer running on low speed, gradually add butter, cottage cheese, and Monterey Jack.

    Increase speed to medium and continue mixing for 2 minutes.

    Fold in chilis.

    Fill casserole dish and sprinkle with Parmesan.
