- 10 large eggs
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 8 tablespoons unsalted butter
- 2 cups small curd cottage cheese
- 1 lb monterey jack cheese, shredded
- 2 (4 ounce) cans green chilies, chopped
- 1/4 cup parmesan cheese, grated
Directions

1Heat oven to 350 degrees.

2Spray a 9 inch square csserole dish with oil.

3In the bown of a stand mixer, slightly beat eggs.

4In a separate bowl, sift flour, baking powder, and salt.

5Add to eggs and beat to combine.

6With mixer running on low speed, gradually add butter, cottage cheese, and Monterey Jack.

7Increase speed to medium and continue mixing for 2 minutes.

8Fold in chilis.

9Fill casserole dish and sprinkle with Parmesan.

10Bake for 45 minutes, or until center feels firm to the touch.
