- 2 tablespoons oil
- 2 onions, thickly sliced
- 1 teaspoon chili powder
- 1 tablespoon flour
- 1 cup chicken stock or 1 cup water
- 1 lb green beans, trimmed and cut
- 1 red pepper, seeded and sliced
- 1 teaspoon tomato paste
- salt and pepper
- 4 small tomatoes, peeled and quartered
Directions

1Heat oil in saucepan or wok.

2Add onions and fry until softened, about 8 minutes.

3Add chilli powder and flour.

4Cook stirring for 2 minutes.

5Gradually add stock stirring until smooth.

6Add beans, pepper and tomato paste.

7Lower heat and simmer 15 minutes.

8Season to taste.

9Add tomatoes and cook another 3 minutes.
