- 8 cans whole green chiles
- 9 eggs
- 1 T. Cumin
- 2 bags shredded cheese (cheddar, jack, pepper jack are all good)
- 1 T. Flour
- 3/4 T. Salt
- Pepper to taste
- 1 1/2 C. Milk
Directions

1Preheat the oven to 350. Open and drain chiles from cans. Using fingers, open chilies and place at the bottom of a 9x13 greased pan so they are one layer thick. Place all 9 eggs in a blender and add milk, salt, flour, pepper and a hand full of cheese and cumin. Blend for 30 seconds. Pour half of the mixture over the first layer of green chiles and take half of the cheese and sprinkle over the top. Add another layer of chiles, then egg mixture and top with cheese. Bake in the oven for 45-55 minutes or until top is golden brown.
