  • 1 cup chopped onion
  • 1 12 tablespoons butter
  • 2 (5 ounce) canschopped green chilies, drained
  • 2 cups shredded cheddar cheese
  • 1 cup shredded monterey jack pepper cheese
  • 3 eggs
  • 1 cup sour cream
  • 14 teaspoon salt
  • 14 teaspoon crushed red pepper flakes
  • 1 cup chopped seeded fresh tomato

    Preheat oven to 350 degrees.

    In a saucepan, stir and cook onions in butter until tender.

    Stir in green chilies; spoon evenly into a 8x8 inch square baking dish.

    Sprinkle with cheeses.

    In a bowl, beat eggs lightly.

    Add sour cream, salt and pepper flakes; beat until blended.

    Spoon mixture over cheese.
