- 8 large green chiles
- 8 egg yolks
- 2 Tbsp. water
- 1/2 tsp. salt
- 16 oz. Cheddar cheese
- 8 egg whites
- 1/4 c. flour
- cooking oil
Directions

1Cut cheese into slices to fit inside of chiles.

2In small bowl, beat egg yolks and water slightly.

3Add flour and salt. Beat 6 minutes on high speed until thick.

4Beat egg whites until stiff peaks form.

5Fold yolks into whites.

6Heat 1/2-inch oil to 375°.

7Spoon batter into oil (the length of chili); top with chile (with cheese inside).

8As batter sets, cover with more batter. When bottom is brown, turn and brown top side.

9Serves 6 to 8.
