- 2 lb. boneless pork
- 2 Tbsp. vegetable oil
- 1 chopped onion
- 1 large clove garlic, minced
- 2 tsp. all-purpose flour
- 1 (8 1/4 oz.) can stewed tomatoes
- 1 (7 oz.) can chopped green chilies
- 1 (10 oz.) can Mexican tomatoes
- 3 chopped chilies
- salt and pepper
Directions

1Trim off fat; cut pork into cubes.

2Heat oil in heavy pan or Dutch oven.

3Add pork; cook until brown.

4Add onion and garlic; cook until tender.

5Stir in flour.

6Cook and stir 1 to 2 minutes. Add stewed tomatoes, chopped chilies and Mexican tomatoes with hot chilies.

7Season to taste with salt and pepper.

8Cover; cook for 1 to 1 1/2 hours.

9Can wrap in flour tortillas and top with grated cheese.
