  • 1 lb ground beef, 85/15
  • 1 medium onion, chopped
  • 2 (16 ounce) cans pinto beans, undrained
  • 2 (16 ounce) cans red kidney beans, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 chipotle pepper, chopped
  • 1 teaspoon kosher salt
  • 14 teaspoon ground black pepper
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 12 cups water
  • 3 tablespoons cornstarch

Directions

    In a large covered pot, brown the beef and onion.

    Drain grease, if needed, and return to pot.

    Add remaining ingredients and stir.

    Bring to a boil, then reduce heat to low and cover.

    Simmer, covered, for 2 hours, stirring occasionally to prevent sticking.

    If needed, thicken with cornstarch mixed with the same amount of water, adding a little at a time and stirring thoroughly after each addition, until desired consistency is reached.
