Ingredients

  • 2 lb Ground Beef
  • 1 lb Good Quality Bacon, chopped
  • 1 large Yellow Onion, diced
  • 1 large Red Bell Pepper, Roasted & Chopped
  • 1 large Yellow Bell Pepper, Roasted & Chopped
  • 2 can 15 oz Diced Tomatoes
  • 3 can 8 oz Tomato Sauce
  • 2 can Red Kidney Beans
  • 4 clove Garlic, diced
  • 1/2 tsp Ground Cumin
  • 1/2 tsp Oregano
  • 1 tsp Smoked Paprika
  • 2 tbsp Chili Powder
  • 1/2 tsp Cayenne Pepper
  • 8 oz Good Dark Beer
  • 1 Salt & Pepper to taste
  • 1 tbsp Butter
  • 2 Turns of the pan with olive oil.

    In a large stock pot, add bacon to heated olive oil and butter.

    While waiting for bacon to get slightly crisp.

    Roast Bell Peppers in oven on broil.

    I lightly coated them in olive oil to keep them moist.

    Remove bacon.

    And place to side for later.

    Add onion to same pot.

    Don't remove bacon grease.

    This will add a depth of flavor.

    Saute until translucent.

    Add ground beef to onions and brown.

    Add all spices.

    Cumin, oregano, chili powder, garlic, smoked paprika, cayenne pepper, salt & pepper.

    Stir.

    After letting it cook for a 2 or 3 minutes.

    Add the dark beer.

    Work the bottom of the pan with a wooden spoon.

    Get all that flavor off the bottom.

    Let the beer cook out.

    When there is only a little bit left.

    Salt and pepper again.

    Add beans, tomato sauce, and diced tomatoes, roasted(chopped) peppers.

    Add bacon back in.

    Let simmer for 30 minutes.

    I grated sharp cheddar cheese.

    And topped my bowl with sour cream, cheese, chopped scallions, and oyster crackers.
