  • 1/4 lb. suet (optional)
  • 6 lb. lean meat
  • 1 c. chili powder (4.5 oz.)
  • 2 Tbsp. ground cumin
  • 2 Tbsp. oregano
  • 2 Tbsp. salt
  • 1 to 2 Tbsp. cayenne
  • 4 cloves garlic, minced
  • 2 qt. beef stock
  • 1/2 c. Casa Marina or corn meal
  • 1/2 c. water

    Brown meat and suet a little at a time; drain excess fat in colander. Put drained meat into large kettle. Add rest of ingredients. Cook slowly 1 1/2 to 2 hours. Mix Casa Marina and water. Makes a paste. Add to meat mixture and simmer 30 minutes.
