  • 1 c. chopped green pepper
  • 1 crushed clove garlic
  • 3 Tbsp. flour
  • 2 (28 oz.) cans whole tomatoes, cut up
  • 1 (8 oz.) can tomato sauce
  • 1 c. chopped onion
  • 3 Tbsp. vegetable oil
  • 1 lb. beef stew meat
  • 3 (16 oz.) can kidney beans
  • 1 to 2 Tbsp. chili powder
  • 2 tsp. salt

Directions

    Cook and stir green pepper, onion and garlic in 1 tablespoon of vegetable oil over medium heat until onions are tender.

    Cut beef into 1/2-inch pieces and coat with flour.

    Brown in 2 tablespoons of vegetable oil.

    Stir in tomatoes, beans with liquid, tomato sauce, chili powder, green pepper and salt.

    Cover and simmer; stir some until beef is tender, about 2 hours.

    Uncover and simmer, stirring some for 30 minutes.
