  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 lb. ground beef
  • 2 cans (4 oz.) chopped green chilies, undrained
  • 1 tsp. oregano
  • 1 tsp. chili powder
  • 1 1/2 tsp. cumin
  • 1 (6 oz.) can tomato paste
  • 2 cans beef broth or 2 1/2 c. beef bouillon
  • 1 (16 oz.) can red kidney beans, undrained

Directions

    Brown ground beef in large pot.

    Drain.

    Add onions and garlic. Then add green chilies, seasonings, tomato paste, broth/bouillon and beans.

    Bring to a boil; lower heat to simmer.

    Cover and cook 45 minutes to 1 hour.
