- 8 eggs
- 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 3/4 tsp. salt
- 3 c. shredded Monterey Jack cheese (12 oz.)
- 1 1/2 c. cottage cheese (12 oz.)
- 2 (4 oz.) cans mild green chilies, drained, seeded and chopped
Directions

1In large bowl, beat eggs until light.

2Stir together the flour, baking powder and salt.

3Add to eggs; mix well.

4Fold in cheeses and chilies.

5Turn into a greased 9 x 9 x 2-inch baking dish.

6Bake in a 350° oven for 40 minutes.

7Remove from oven; let stand 10 minutes.

8Cut into small squares; serve hot.

9Makes 3 to 4 dozen appetizers.
