- 1 clove garlic, minced
- 2 onions, chopped
- 1 to 2 Tbsp. oil
- 2 to 3 c. chopped tomatoes with liquid
- 2 to 3 c. kidney beans, cooked
- 1 tsp. chili powder
- 1/2 tsp. salt
- dash of pepper
- 1 to 2 carrots, grated
- 1 to 2 green peppers, chopped
- 1 c. raw cashews
- 1 tsp. basil
- 1 tsp. oregano
- 1 bay leaf
- 1/4 c. raisins
Directions

1Saute garlic and vegetables (except tomatoes) in oil.

2Add nuts, beans, tomatoes, seasonings and raisins.

3Simmer for 2 hours in covered pot or in slow cooker.

4Serve over cornbread or pasta, or with fresh bread or rolls.
