  • 1 lb. mild Cheddar cheese, shredded *
  • 1 lb. Monterey Jack cheese, shredded *
  • 2 large cans whole chilies
  • 4 eggs
  • 2 tsp. salt
  • 1 large can evaporated milk

Directions

    Wash chilies, remove seeds and pat dry.

    Layer half the chilies, then half the cheese in pan.

    Repeat this step.

    Beat eggs, add flour, salt and can of milk.

    Beat well and pour over top of cheese.

    Preheat oven to 350°.

    Watch baking time carefully toward end as ovens vary.
