  • 1 pkg. Cheddar cheese, grated
  • 2 small cans Ortega chile peppers
  • 4 egg yolks
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2/3 c. evaporated milk

    Mix together.

    Beat 4 egg whites until stiff.

    Fold egg whites into yolk mixture.

    Spread over cheese and chile mix.

    Push in with a fork.

    Bake at 325° for 1 hour.

    Slice tomatoes last 30 minutes.
