- 2 (7 oz.) cans green chiles
- 3 c. sharp Cheddar cheese, grated
- 4 green onions, sliced
- 3 c. Mozzarella cheese, grated
- 6 eggs
- 4 c. milk
- 3/4 c. flour
- 1/4 tsp. salt
- 8 oz. salsa (your favorite)
Directions

1Split chili peppers lengthwise and remove seeds.

2Spread in a single layer in a greased 9 x 13 baking dish.

3Sprinkle Cheddar cheese, green onions and 1 1/2 cups of Mozzarella over chiles.

4In a bowl, beat eggs, milk, flour and salt together until smooth. Pour over chiles and cheese.

5Bake in a 325° oven for 50 minutes or until a knife inserted in custard comes out clean.
