  • 12 fresh large mild green chiles (such as Italian frying peppers)
  • 1 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 c. cornmeal
  • 2 eggs
  • 1 c. milk
  • 1/2 lb. Monterey Jack cheese
  • oil (for deep frying)
  • salsa

    Heat the broiler.

    Broil the chiles, turning them until the skin is charred on all sides, about 15 minutes.

    When cool enough to handle, peel leaving stems intact (can be put in plastic bag to make them easier to peel).
