Ingredients

  • 8 qt. peeled fresh tomatoes
  • 1 c. salt (plain)
  • 2 c. celery
  • 2 onions
  • 3 bell peppers
  • 3 c. light brown sugar
  • 6 c. vinegar
  • 1 Tbsp. cinnamon
  • 1 Tbsp. black pepper

Directions

    Chop tomatoes and add salt.

    Drain and let stand overnight. Chop celery, onions and bell peppers.

    Add to tomatoes.

    Cook slowly on stove until celery is done.

    Add last 4 ingredients. Bring to boil.

    Sterilize jars.

    Bottle in sterile jars and adjust lids.

    Process in boiling water bath for 10 minutes.
