- 2 bags instant rice
- 1 (15 oz.) can chili (no beans)
- 1 (6 oz.) c. mixed vegetables
- sliced green onions
- sour cream
- grated Cheddar cheese
Directions

1Cook rice according to directions on package.

2In a large saucepan, combine chili, vegetable juice and vegetables.

3Bring to a boil; cover and simmer over low heat for 4 or 5 minutes.

4Serve over rice and top with sliced onions, sour cream and grated cheese.
